    Feeding Vegans World Wide When my girl went vegan I had to find the quintessential protein, and it wasn’t going to be tofu. I found it in quinoa, a protein packed ancient grain that also provides those ever-important amino acids. However, finding a guide to cooking it was another matter. Finally, I have found The Quinoa Cookbook and couldn’t be more grateful to the author, John Chatman, for putting together over a hundred recipes from around the world.     This is another cookbook that could have really used more photos - I would love to see what the quinoa cake is supposed to look like! There are some unique recipes in this book that I hadn't heard of before but there aren't many pictures and the instructions seem a bit high level. There is a nice introduction though that explains some helpful tips about cooking with quinoa.

    3.5 stars Quinoa is a hip little super grain (or really seed) that has been gaining more and more attention recently due to the fact that it is a complete protein grain, is high in fiber and is naturally gluten free. When it crossed my radar a few years ago I knew little about how to cook it or use it in my meals. Mostly I used it as a rice substitute when cooking Asian foods at home. This cookbook is a nice introduction to the many other ways quinoa can be used in your meals. The author has a few 3.5 stars Quinoa is a hip little super grain (or really seed) that has been gaining more and more attention recently due to the fact that it is a complete protein grain, is high in fiber and is naturally gluten free. When it crossed my radar a few years ago I knew little about how to cook it or use it in my meals. Mostly I used it as a rice substitute when cooking Asian foods at home. This cookbook is a nice introduction to the many other ways quinoa can be used in your meals. The author has a few chapters of background information about the seed's nutrition and history as well as the basics of preparing it in a few different ways - cooked, toasted, germinated and as flour. Then there is a chapter each dedicated to breakfast, lunch and dinner, dessert and global cuisine. My Kindle edition also includes a bonus chapter of American favorites remade with quinoa and a few sample menus. I have not yet made any of the recipes out of the cookbook, but the basic preparation instructions mesh with my experience. On reading through the recipes they all appeared clear with the exception of a few instances where the ingredients called for water and the instruction called for stock, but in those cases it was obvious which was correct so with a little common sense I suspect they will all cook up well. I went through and marked a dozen or so recipes to add to our menu planning at some point and I look forward to trying them. If you are cooking gluten free, do be aware that not all the recipes contained in the cookbook are gluten-free. Many call for flour. But if you are experienced in gluten-free cooking and baking I suspect you could adjust the recipes to meet your needs without too much difficulty. Overall, I'm quite pleased to have this cookbook on my Kindle shelf.

In my never ending search to incorporate healthy eating into my family’s diet, I eagerly purchased this book wanting to check out what all the hype was surrounding this new “super food”. I am so glad I did. The book starts out with a simple and easy to follow introduction on Quinoa, where it came from, its benefits and why it is so healthy for us. I am so glad I did. The book starts out with a simple and easy to follow introduction on Quinoa, where it came from, its benefits and why it is so healthy for us. I learned just the right amount of information without going into too much depth. Quinoa is a gluten free product that is very high in protein and anti-oxidants. It can be incorporated into many dishes, can be ground into flour, or cooked right on the stove infused with flavors! The book also includes a section on proper storage of Quinoa, which I found extremely helpful as well as best practices for cooking and how to know when it’s “done”. Now on to the recipes…. The book breaks down the recipes into simple and easy to follow directions, some include substitutions if you are a Vegan or Vegetarian. The recipes range from simple breakfast foods to salads and main dinner meals. I decided to ease into the recipes and try a simple salad and made the Waldorf salad with Quinoa. I loved it! The Quinoa was cooked perfectly, thanks to the cooking tips and the combination of apples, walnuts, yogurt and Quinoa with delicious! I am hooked and so is my family! Next up… Butternut Squash Quinoa Soup!

    I’ve been hearing about “superfoods” for a long time, and generally trying to live healthier. This is a great cookbook centered around quinoa sure to help me get there. John Chatham, also the author of the Paleo Diet Solution and others, is possessed of a captivating narrative flair in his health and diet writing. Quinoa itself is completely gluten free, and can be used in many kinds of preparations, but a fair number of recipes in this book contain bread flour, whole wheat, panko bread crumbs, I’ve been hearing about “superfoods” for a long time, and generally trying to live healthier. This is a great cookbook centered around quinoa sure to help me get there. John Chatham, also the author of the Paleo Diet Solution and others, is possessed of a captivating narrative flair in his health and diet writing. Quinoa itself is completely gluten free, and can be used in many kinds of preparations, but a fair number of recipes in this book contain bread flour, whole wheat, panko bread crumbs, etc. If you’re sensitive, you have to pack and choose. Many recipes are gluten-free, and all can be modified. This informative quinoa cookbook is unlikely to disappoint. I’m not gluten intolerant myself, but I’m trying to step down my intake, and The Quinoa Cookbook is an excellent step in that direction. The range of recipes is broad - quinoa salad with diced apple and vinaigrette, quinoa oatmeal cookies, apple cinnamon breakfast quinoa, Mediterranean breakfast quinoa, blueberry quinoa waffles – and all of the meals are delicious and refreshing.

I made the Quinoa Fried Chicken Cutlets for dinner one The Quinoa Cookbook opened my eyes up to all the different possibilities that this super-food has to offer. The cookbook starts out with simple ways to cook the quinoa, explaining how to prepare it and when it is done, before delving into the recipes, which was a nice crash-course for a beginner like me.     I have been trying to incorporate more quinoa into my diet, because of its nutritional value, but quickly grew bored eating the same quinoa based salads over and over again. I loved that this book provided such a wide variety of recipes, lots of international flavor, and complete meal ideas, including hot and cold side dishes, entrees, breakfast foods, and even desserts. I also feel better about indulging in comfort foods like bread and cookies using these recipes, which include the healthy addit I have been trying to incorporate more quinoa into my diet, because of its nutritional value, but quickly grew bored eating the same quinoa based salads over and over again. The recipes included are simple in ingredients and preparations, thus making it easy to starting using it. There are even recipes for Mac and Cheese, Chinese Fried Rice, and Stuffed Peppers all with Quinoa as a star ingredient. This cookbook is a magnificent find and great reason to stay home and cook with the family.

If that’s something you want to try doing, you could use this cookbook as a guide, since there is a generous helping of super-healthy recipes for every course.     For those who believe in the power of the superseed, quinoa, this book is for you. There are a wide range recipes from the homestyle cooking we all know and appreciate to more exotic cuisine like Hungarian Quinoa and Kale Stew. Just replace the carb with quinoa!

    I'm giving this book three stars instead of four for a technical reason. Many of the 'vegetarian' dishes have chicken broth or prosciutto ham as an ingredient. I think the book is marred by this. I don't know if it is just sloppy work or no knowledge of vegetarianism.
