This cookbook interested me because I just inherited a cast iron skillet that is well-seasoned and ready for action! The first thing that drew me to the book was the cover photo. That’s was exactly the type of homey, delicious dish I was looking to make in my new cookware. I ended up bookmarking several recipes and have been working through the list. I haven’t been disappointed yet. There is interesting history of cast iron cookware in the book as well, which makes for fun reading while waiting f This cookbook interested me because I just inherited a cast iron skillet that is well-seasoned and ready for action! A nice bunch of recipes I have gone through the book reading the recipes, while reading the Crogue Monsieur recipe I was puzzled. Its a recipe for a plain grilled cheese, no egg involved in the recipe as written. The writer has left out the egg, that makes it a Croque Monsieur. Once made you dip the whole sandwich in an egg and milk mixture as you would for French toast, cook and you have a fabulous sandwich that is much better than a grilled cheese. Makes me wonder what is missing from other reci A nice bunch of recipes I have gone through the book reading the recipes, while reading the Crogue Monsieur recipe I was puzzled. Makes me wonder what is missing from other recipes, the reason for 3 stars. The care and maintenance of the cast iron pans is very good, I have purchased a skillet for my daughter for Christmas.
