Got this cookbook in ebook format from the library. It’s a good book for a newby using an Instantpot. I’ve cooked with an old-fashioned pressure cooker for most of my 60+ years of marriage and decided to get with the times. I learned a good deal about cooking procedure through this cookbook. I look for simpler recipes that don’t use unusual ingredients. I found several that I think I will try; so glad I got it from the library rather than buying it. There is a photo for every recipe and it is big and vibrant, which is a big part of how I read cookbooks. I thought the recipes seemed easy to follow and I can definitely see myself cooking from this. Will definitely revisit.

Solid cookbook! I'm iffy on the whole "detox" concept so I wasn't interested in that aspect of this blogger's work, but I wanted to find more vegetarian recipes for the Instant Pot. (Normally I rely on the internet, but I was getting bored of bean soups, more bean soups and a bunch more bean soups with a random mac and cheese thrown in there). This fit the bill! Even the not-vegetarian recipes have the option to turn it into vegan/vegetarian. My main goal is that if I can get 5-6 recipes out of Solid cookbook! I'm iffy on the whole "detox" concept so I wasn't interested in that aspect of this blogger's work, but I wanted to find more vegetarian recipes for the Instant Pot. Amazing! Have made a dozen of the recipes so far and couldn't fault a single one (favourite so far is the Carolina BBQ chicken). Some of my favs were Creamy Tuscan Chicken with Mashed "Potatoes", (the potatoes are actually mashed cauliflower), Instant "Fried Rice", (again, the rice is actually cauliflower), and Asparagus & Leek Frittata. The times are off. Curry salmon- raw. BBQ chicken with slaw- raw. ( I had to use the Poultry setting to cook the Salmon, not manual. In place of using the manual button for the BBQ chicken, I used the poultry button and let the Instant Pot vent slow. Lat I made the creamy Tuscan- now wiser and not using the manual button, I used Poultry and slow vent. and it was cooked though. Be careful with this cookbook. It's not accurate. Half of my household is dieting right now, and none of us are inclined to spend too much free time cooking, so I'm looking for healthy meals for the ol' instant pot. From this one I made shakshuka and brownies tonight. The shakshuka was excellent, the brownies are cooling now and look great, and I'm going to round it out by making granola bars tomorrow morning. If I get a solid breakfast, dinner and dessert out of this cookbook, it will have done its job and then some! Though early days, we have already cooked two dishes over the weekend. It is very helpful in explaining how to use the One Pot and considering we had only had it for a few days,it helped us learn the basics. Though it has quite a few recipes, they cover starters,sides,mains and deserts, as my focus is on main dishes I found the recipes limited. However I am happy with the book and really enjoyed our first attempts.

So far I have only made the broccoli cheddar soup but it was easy and it was good. next on my agenda is the hidden Cauliflower mac 'n cheese or the Cauliflower rice. the orange chicken and the Chicken Tikka Masala also look quite good. Lots of nutritious, quick and easy,recipes. Easy-to-find ingredients. Most recipes that call for meat or fish also has a vegan substitute. Good for the beginner as it explains the Instant Pot, the basic tools, and a helpful resource guide. The introduction is one of the reasons I bought this book (after borrowing from the library). I have been looking for a Gluten-free, vegan cookbook for ages. To find one for my instant pot is AMAZING. I am so glad to see recipes with modifications and so many recipes have NO OIL in the ingredients list. I got this book from the library, but I’m going to buy a copy.
