    Author Pamela Ellgen appreciates today’s competing desires: to prepare delicious, healthy low-carb meals and to avoid long hours in the kitchen. She manages to combine both in this wonderful cookbook, which lives up to its name. All but a very, very few of these recipes take 30 minutes or less, and Ellgen’s variety is so broad that there are plenty of recipes to satisfy everyone. Almost none feature out-of-the-way ingredients, and Ellgen relies on easy techniques. Highly recommended.

Not only do the 100 recipes sound delicious, they all can be prepared in less than half an hour. I love to cook, but I don't necessarily want to slave away in the kitchen for hours preparing a meal. They all are easy, with step by step instructions. Different Pizzas with some yummy ingredients ....Roasted Pork Tenderloin with Apple Cabbage Slaw. Let's face it ... I want to try them all! This low carb cookbook includes: Favorites reinvented—Discover how to make low carb variations of dishes you love, instead of giving them up for good. Everything you need—Find the total carbs, net carbs, and calories for every dish, along with lists of the basic kitchen tools and the 10 ingredients you should always have on hand. I'm a big fan of low-carb diets. There are so many selections of food you can have on the diet... you never go hungry ....... and the weight comes off. What a yummy cookbook - Keto and quick cooking methods are so hot right now I cannot keep the books "in stock". The recipes were well written and easy to follow and I cannot wait to cook my way through this book. If you are doing low-carb or grain-free this is a great book to read! There are recipes for Breakfast and Brunch, Snacks, Salads and Sides, Chicken, Pork, Beef and Lamb, Seafood, Vegetarian and Desserts. For each recipe there are cooking, ingredient, variation, what to do with leftovers etc. I looked at the recipes and I did find quite a few recipes that I flagged and w The 30 Minute Low Carb Cookbook by Pamela Ellgen is a cookbook for those who want to eat a low carb diet for their health or otherwise.100 simple and easy to make recipes in a variety of categories. There are recipes for Breakfast and Brunch, Snacks, Salads and Sides, Chicken, Pork, Beef and Lamb, Seafood, Vegetarian and Desserts. For each recipe there are cooking, ingredient, variation, what to do with leftovers etc. I looked at the recipes and I did find quite a few recipes that I flagged and will be making. Chicken Provencal, Chicken with Port, Mushrooms and Cream and Roasted Pork Tenderloin with Apple Cabbage Slaw. Sound good? I thought so too. What I also liked about the cookbook is that each recipe has a list of total carbs, net carbs and calories. There is also a list of kitchen tools plus the 10 ingredients that you should have on hand for your pantry. Each recipe also tells the reader whether the recipe is Dairy-free, gluten-free, nut free, soy free or vegan. This cookbook should be on your shelf, I plan on making a few of the recipes in the next week or so. I just wish there were more pics of the finished recipe. I do like the book and it will be one I will use for sure. I need to watch my carbs and I am excited to try the recipes.

    Very pleasant surprise here I requested this book because I needed to rethink our carb heavy menu. I was stuck in a bit of a rut and with both kids off at college I now had the freedom to implement some changes. The book does give a good background and tips on the low carb lifestyle and also how to stock your kitchen to get started. Nothing too crazy or out of the ordinary, all accessible right at the local grocery which is a plus! She offers 100 recipes for all the things we eat: breakfast and brunch; snacks, salads, and sides; chicken; pork, beef, and lamb; seafood; vegetarian; and even desserts. With ideas like Pizza Frittata, Parmesan Crisps, Chicken Provencal, Swedish Meatballs, Hawaiian Ahi Poke, Raw Taco Salad with Pico de Gallo, and Almond Flour Brownies, Ellgen offers up meal ad snack ideas that appeal to a wide cross-section of hungry people. And while there are some obvious low-carb ideas like cauliflower rice and zucchini noodles, there are also a lot of ideas that simply focus on making flavorful proteins that can fill you up without the carbs. I especially like how she doesn’t try to change your diet overnight. She talks about making small changes to help switching to lower carb options. Ellgen suggest changing out one meal a day or focusing on meals that are particularly carb heavy. She doesn’t take away all your carbs. Quite the opposite. She explains what it is about certain carbs that offer nutrition, fiber in particular, and encourages her readers to make smarter decisions, to experiment, to find a pattern of healthier eating that fits in with their lives and their goals. Ellgen offers tips for those who are just getting started with a healthier diet, with a low-carb diet, and with home cooking. If you’re wondering just what changes you need to make to your pantry and refrigerator to cook healthier, she has tips for that. The 30-minute Low-Carb Cookbook can make your life easier, tastier, and healthier all at once. If I could change anything about this cookbook, I would add more photos. For me, it’s not only a way to make me want to eat better, it also helps me visualize the steps of the recipe and finished meal. But focusing on the text means that the cookbook is slimmer and more affordable, so you could say those equal each other out. Otherwise, I was really impressed with the simplicity and depth of these recipes, and I can’t wait to dive in and start cooking!     IMPORTANT TO NOTE that this is NOT a ketogenic diet book! In fact the author speaks against such a diet as missing out on many healthy nutrients and fiber. The author's ideal is to keep your net carbs between 50 to 100 grams a day. The per serving stats for each recipe shows total carbs and net carbs. It's the NET CARBS that you want to count. Fiber is good for you so doesn't count against your totals. I found this to be EXTREMELY helpful advice. Whether the recipes are soy free, dairy free, veg IMPORTANT TO NOTE that this is NOT a ketogenic diet book! There is definitely a wonderful variety in here though and as the author says, eating a more protein/fat concentrated diet your portions will be smaller so in the long run you will/should eat less, helping your budget that way. Saddened to see canola oil used in some of the recipes. This is not a healthy oil (do your own research) and I would not recommend using it. Use butter, coconut oil etc. as a substitute. There are 100 different recipes, most are obviously gluten and dairy free (it is low carb after all), but there are even vegetarian options! Not a ton granted, I'll take even one chapter!     Illustrious Illusions

    The recipes are easy and the personal notes are short. the ingredient tips are helpful. Overall i feel like it could use more pictures. Wha makes most of these recipes low-carb is a simple change in one or two ingredients. Not sure it's worth the price, while there is a good variety of recipes from greek, to mexican, to italian and more - the substitutions are so simplistic seems a little silly.
